Beef with Cashews - Serves 4 to 6
 

What You'll Need:
- 500g (1lb) rump steak
- 90g (3oz) unsalted roasted cashews
- 8 shallots, 1/2 cup water
- 2 cloves garlic
- 2.5cm (1in) pieces green ginger


- 3 tablespoons oil
- 1 tablespoon corn flour
- 1 tablespoon soy sauce
- 2 teaspoons sate sauce
- 1 teaspoon sesame oil


 

1. Remove any excess fat from meat, cut meat into thin slices, about 5cm (2in) long. Heat two tablespoons of the oil in pan or wok, add half the beef, cook until well browned, remove from wok, brown remaining meat.


 

2. Chop shallots into 2.5cm (1in) pieces, peel ginger, chop finely; crush garlic.


 

3. Heat remaining oil in pan, add garlic, shallots, ginger and cashew nuts, sauté one minute.


 

4. Add meat to pan with vegetables, toss well. Combine corn flour, water, sate sauce, sesame oil and soy sauce, mix well. Add to pan, stir until boiling and well combined.
